What do I love more than croissants when it comes to pastry? Well, that would be croissants with CHOCOLATE! Pain au chocolat are a wonderful viennoiserie pastry that combines the flaky and buttery deliciousness of a croissant and wraps it around some decadent chocolate. While these are not filled with a massive amount of chocolate, it feels like a great balance when you dig into these treats. These are another recipe that I've learned and refined through the mentorship of French pastry master Manuel Bouillet. Just like our croissants, we use imported French flour, French butter, and Swiss chocolate designed specifically to take these pastries to another level. Just before baking we apply a thin coat of egg wash that helps to create the shiny and crispy crust. If you've never had a pain au chocolat, give these a try... I think they'll bring a smile to your face.
